Grandma Clark’s
Peanut Brittle Recipe

2 Cups of granulated sugar

1 Cup White Karo Syrup (must be Karo)

½ Cup of Water

2 Cups Raw Peanuts

1 Tbsp Butter
-
1 Tbsp Vanilla

1 Large Tbsp Baking Soda

Candy Thermometer
Notes - The weather needs to be nice and sunshiney to make good candy. You’ll need a sturdy pot with a heavy bottom, and use a wooden spoon.

Add Sugar, Karo Syrup, and Water into your pot and set on the burner at medium to high heat. Mix ingredients together and bring to a hard ball stage (between 255-260 degrees). Syrup mixture should thread off your wooden spoon when ready.

Add in raw peanuts and cook peanuts until golden brown and peanuts begin to crack and pop in syrup.

Add butter and vanilla, stir well.

Add Baking soda. Do not over stir. Stir just until it is mixed in. It will be real foamie.

Pour into a cookie sheet with well buttered parchment paper.

Set in a cool place, but not the refrigerator. Check often to see if it is ready to crack into pieces (will take about 40 min to an hour).

Crack into small pieces and enjoy!
